Apple and Sultana Muffins
A delicious recipe that's easy to prepare, it only requires one bowl and a spoon. Kids love them! They will work using tinned pie apple if fresh apples aren't available.
INGREADIENT
- 125g butter cooled melted
- 1/2 cup sugar
- 1 egg lightly beaten
- 3/4 cup milk
- 1 tbs baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 1/2 cups plain flour
- 1 1/2 cups apple diced
- 1/2 cup sultanas
- 2 tbs sugar *to decorate *extra
- 2 tsp ground cinnamon *to decorate *extra
Direction
- In a bowl, combine butter, sugar, milk and beaten egg.
- Sift in flour, cinnamon, baking powder and salt, then mix.
- Fold in diced apples and sultanas.
- Spoon mixture into lightly greased muffin tins until 2/3 full. Sprinkle combined sugar and cinnamon over the top of the muffins.
- Bake in a pre-heated 200C (180C fan-forced) oven for 15-20 minutes, or until muffins are lightly browned.
