Apple Muffins
Quick and easy, and great for lunch boxes. I have played around with this recipe and have been using a full 400g tin of pie apple. It makes the muffins a little less sweet and they do not rise as much, but they are more filling. It is up to you how you want to make them.
INGREADIENT
- 1 3/4 cups self-raising flour sifted
- 1/3 cup sugar
- 3/4 cup milk
- 2 eggs
- 50 g butter melted
- 200 g canned pie apple
- 2 tbs cinnamon sugar
Direction
- Mix milk, eggs and butter together.
- In a separate bowl, combine flour, sugar and apple.
- Add milk, egg and butter mixture. Stir until mixture is well combined.
- Pour mixture into greased muffin pans.
- Dust tops with cinnamon sugar.
- Bake at 200C for about 20 minutes.
