Banana fruit cake
A moist, fruity cake.
INGREADIENT
- 125 g butter
- 3/4 cup brown sugar
- 2 tablespoons golden syrup
- 1 cup mashed banana
- 1 1/2 cups self-raising flour
- 2 teaspoons ground ginger
- 2 teaspoons mixed spice
- 1 egg
- 1 cup sultanas
- 2 tablespoons milk
Direction
- Melt butter, sugar, golden syrup and spices in a saucepan over low heat. Allow to cool slightly.
- Stir in banana and egg using a whisk. Sift in flour.
- Add milk and sultanas. Mix well.
- Pour into greased and lined cake tin. Bake at 170C for approximately 1 hour.
