Best-Ever Chicken Sandwiches

The best chicken sandwich you will ever taste!

INGREADIENT

    • 600 g chicken breast fillet
    • 1/2 cup fresh flat-leaf parsley coarsely chopped
    • 8 slices white bread
    • 40 g soft butter
    • 1/2 cup whole-egg mayonnaise

Direction

    1. Place chicken in medium saucepan. Add enough cold water to cover. Bring to the boil, reduce heat and simmer for 10 minutes.
    2. Remove from heat. Stand for 30 minutes. Drain.
    3. Cut chicken into 2 cm pieces. Combine in a medium bowl with mayonnaise and parsley.
    4. Spread bread with butter. Sandwich chicken mixture between bread slices.
    5. Cut sandwiches into triangles.
