Boiled Cherry Fruit Cake
Celebrate Christmas with this old-fashioned boiled fruit cake spiked with sherry and dotted with glace cherries.
INGREADIENT
- 200g butter, chopped
- 375g pkt mixed dried fruit
- 200g glace cherries, plus extra to serve
- 1 cup brown sugar
- 1/4 cup dry sherry
- 1 cup self-raising flour
- 1 cup plain flour
- 2 tsp mixed spice
- 1/2 tsp bicarbonate of soda
- 3 eggs, lightly whisked
- Icing sugar, to dust
Direction
- Place the butter, mixed fruit, cherries, brown sugar, sherry and 1 cup water in a saucepan over medium heat. Bring to the boil. Reduce heat to low and simmer for 10 minutes. Set aside to cool.
- Preheat oven to 160C/140C fan forced. Line the base and side of a round 20cm cake pan with baking paper
- Add the flours, mixed spice, bicarbondate of soda and eggs to the fruit mix and stir until well combined. Pour into the prepared pan. Bake for 55 mins or until a skewer inserted into the cake comes out clean. Set aside to cool in the pan.
- Dust with icing sugar and top with extra cherries to serve.
