Boiled pineapple fruit cake

A moist fruit cake that is so easy to make.

INGREADIENT

    • 500 g mixed dried fruit
    • 440 g (crushed) canned pineapple
    • 1 cup sugar
    • 125 g butter chopped
    • 1 tsp mixed spice
    • 1/2 tsp ground cinnamon
    • 1 tsp bicarbonate of soda
    • 2 eggs beaten
    • 1 cup self-raising flour
    • 1 cup plain flour

Direction

    1. Place fruit, crushed pineapple including juice, butter, sugar and spices in a saucepan. Boil for 5 minutes.
    2. Add bicarbonate of soda. Turn off heat and allow to cool.
    3. Add eggs and flour.
    4. Preheat oven 160C. Pour into a prepared cake tin and bake for 40 minutes or until the top is golden.
    5. Remove from oven, cover with foil and bake for a further 50 minutes.
