Brown rice salad
This is a delicious nutty-flavoured salad, which is just as nice served hot or cold.
INGREADIENT
- 3 cups brown rice cooked
- 6 spring onions sliced
- 1 red capsicum finely diced
- 1/2 cup currants
- 2 tbs sunflower seeds
- 2 tbs pepitas
- 1/4 cup sunflower oil
- 4 tbs soy sauce
- 2 tbs lemon juice fresh
- 1 garlic clove crushed
Direction
- Place the rice, sliced spring onions, diced capsicum, currants and seeds In a large salad bowl, then toss to mix.
- Brown Rice Salad
- In a screw-top jar, add the sunflower oil, soy sauce, lemon juice and garlic.
- Brown Rice Salad
- Shake well to mix and then pour over the salad, stirring to coat all ingredients.
