Brown rice salad

This is a delicious nutty-flavoured salad, which is just as nice served hot or cold.

INGREADIENT

    • 3 cups brown rice cooked
    • 6 spring onions sliced
    • 1 red capsicum finely diced
    • 1/2 cup currants
    • 2 tbs sunflower seeds
    • 2 tbs pepitas
    • 1/4 cup sunflower oil
    • 4 tbs soy sauce
    • 2 tbs lemon juice fresh
    • 1 garlic clove crushed

Direction

    1. Place the rice, sliced spring onions, diced capsicum, currants and seeds In a large salad bowl, then toss to mix.

    3. In a screw-top jar, add the sunflower oil, soy sauce, lemon juice and garlic.

    5. Shake well to mix and then pour over the salad, stirring to coat all ingredients.
