Cheesy Vegetable Muffins
These quick and easy muffins are a great way to hide vegetables from the kids!
INGREADIENT
- 2 cups mixed vegetables grated
- 1 1/2 cups plain flour
- 3 tsp baking powder
- 1 cup cheese grated
- 2 eggs lightly beaten
- 1/3 cup olive oil
- 1/2 cup milk
Direction
- Preheat oven to 180C.
- Grease a 12-hole muffin pan.
- Mix vegetables and ¾ cup of cheese with the flour and baking powder.
- Whisk together the eggs, oil and milk, then add to the flour mixture.
- Stir until just combined.
- Spoon the mixture evenly into the muffin holes and sprinkle with remaining cheese.
- Bake for 25 minutes.
