Choc-Orange Cupcakes
I got the idea to make some chocolate-orange flavoured cupcakes, and decided to be creative and make up my own recipe. I pretty much just used a standard cupcake recipe and added some personal tweaks. Plus, they have a Malteser "surprise" inside them! They're quite easy to make so they're perfect for kids to help out.
INGREADIENT
- 165 g soft butter
- 3/4 cup caster sugar
- 3 egg lightly beaten
- 1 1/4 cup self-raising flour
- 1 orange rind grated
- 1/2 cup milk
- 2 drops red liquid food colouring
- 2 drops yellow liquid food colouring
- 45 g Maltesers
- 250 g M&Ms
- 1 tsp sugar
- 2 tbs butter
- 1 1/2 cup icing sugar
- 1 tbs cocoa
- 2 tbs lukewarm water
- 1/2 tbs fresh lemon juice
- 1/2 tbs fresh orange juice
Direction
- Preheat oven to 190C (170C fan forced).
- Beat butter and caster sugar until creamy.
- Add eggs, beating in between each addition. Stir in milk.
- Sift flour 3 times and fold flour, orange rind and food colouring through mixture.
- Spoon batter into cupcake case-lined small muffin pans, filling to half-way. Drop one Malteser into each cupcake, pressing right down.
- Bake for 15-20 minutes until cupcakes spring back when lightly touched. Allow to cool completely.
- Frosting: Mix all ingredients, beat until well combined.
- Spread or pipe on frosting, decorate with M&M's and sprinkle coloured sugar over cupcakes.
- Store in an airtight container or on a plastic covered tray in the fridge until required.
