Condensed Milk Fruit Cake
A family favourite recipe without eggs. An Irish friend of mine once said, it was as good as their traditional Christmas cakes. Give it a try!
INGREADIENT
- 1125g mixed fruit
- 250g butter, chopped
- 1 tsp bicarbonate of soda
- 1 cup water
- 395g condensed milk
- 1 tbs white vinegar
- 2 tbs sherry
- 1 tsp vanilla essence
- 2 cups plain flour, sifted
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground cloves
- 1/4 cup glace cherries *to decorate
- 1/4 cup almonds *to decorate
Direction
- Put mixed fruit, butter, bicarb soda and water in a pan and bring to the boil. Allow to cool.
- Add condensed milk, vinegar, sherry or brandy and vanilla essence.
- Sift flour, baking powder, salt and ground cloves, and gradually add to fruit mixture.
- Put into a greased, paper-lined tin and bake at 150C for 2 hours. Check with a skewer and adjust cooking time if necessary.
- Put a cherry in each corner and place almonds to make a flower effect.
- Brush with sherry or brandy to glaze.
