Condensed Milk Fruit Cake

A family favourite recipe without eggs. An Irish friend of mine once said, it was as good as their traditional Christmas cakes. Give it a try!

INGREADIENT

    • 1125g mixed fruit
    • 250g butter, chopped
    • 1 tsp bicarbonate of soda
    • 1 cup water
    • 395g condensed milk
    • 1 tbs white vinegar
    • 2 tbs sherry
    • 1 tsp vanilla essence
    • 2 cups plain flour, sifted
    • 1 tsp baking powder
    • 1/2 tsp salt
    • 1/2 tsp ground cloves
    • 1/4 cup glace cherries *to decorate
    • 1/4 cup almonds *to decorate

Direction

    1. Put mixed fruit, butter, bicarb soda and water in a pan and bring to the boil. Allow to cool.
    2. Add condensed milk, vinegar, sherry or brandy and vanilla essence.
    3. Sift flour, baking powder, salt and ground cloves, and gradually add to fruit mixture.
    4. Put into a greased, paper-lined tin and bake at 150C for 2 hours. Check with a skewer and adjust cooking time if necessary.
    5. Put a cherry in each corner and place almonds to make a flower effect.
    6. Brush with sherry or brandy to glaze.
