Dairy and Egg-Free Cupcakes
This simple recipe using everyday pantry ingredients is lovely and light and perfect for children who cannot have dairy or eggs.
INGREADIENT
- 1 1/2 cup self-raising flour
- 1/3 cup custard powder
- 1/2 tsp salt
- 1 cup caster sugar
- 1 cup water
- 1/3 cup canola oil
- 1 tbs lemon juice
- 1 1/2 tsp vanilla essence
Direction
- Preheat oven to 180C (160C fan forced).
- Sift dry ingredients.
- Mix wet ingredients in a separate bowl.
- Combine dry and wet ingredients and beat with an electric mixer until smooth.
- Pour into patty cases and bake for 25 minutes.
