Dairy and Egg-Free Cupcakes

This simple recipe using everyday pantry ingredients is lovely and light and perfect for children who cannot have dairy or eggs.

INGREADIENT

    • 1 1/2 cup self-raising flour
    • 1/3 cup custard powder
    • 1/2 tsp salt
    • 1 cup caster sugar
    • 1 cup water
    • 1/3 cup canola oil
    • 1 tbs lemon juice
    • 1 1/2 tsp vanilla essence

Direction

    1. Preheat oven to 180C (160C fan forced).
    2. Sift dry ingredients.
    3. Mix wet ingredients in a separate bowl.
    4. Combine dry and wet ingredients and beat with an electric mixer until smooth.
    5. Pour into patty cases and bake for 25 minutes.
