Diabetic Fruit Cake

This has been a tradition in our family for years. Perfect as a Christmas cake for diabetics as well.

INGREADIENT

    • 1 kg mixed fruit
    • 1/2 cup dates chopped
    • 125 g butter
    • 1 tsp mixed spice
    • 3/4 cup water
    • 1/4 cup orange juice
    • 1/4 cup rum
    • 3 egg lightly beaten
    • 1 cup wholemeal self-raising flour
    • 1 cup wholemeal plain flour
    • 1/2 tsp baking powder
    • 1/2 tsp salt

Direction

    1. Line a 20 cm pan with two thicknesses of baking paper.
    2. Combine dates and mixed fruit in a saucepan with butter, spice and water. Stir over low heat until butter has melted.
    3. Bring to a boil and boil for 3 minutes. Remove from heat and allow to cool completely.
    4. Add rum and orange juice to eggs then add to fruit mixture. Mix well. Add sifted dry ingredients and combine thoroughly.
    5. Spread evenly into pan and bake for 2 hours at 170C.
    6. Cover with foil until cold.
