Diabetic Fruit Cake
This has been a tradition in our family for years. Perfect as a Christmas cake for diabetics as well.
INGREADIENT
- 1 kg mixed fruit
- 1/2 cup dates chopped
- 125 g butter
- 1 tsp mixed spice
- 3/4 cup water
- 1/4 cup orange juice
- 1/4 cup rum
- 3 egg lightly beaten
- 1 cup wholemeal self-raising flour
- 1 cup wholemeal plain flour
- 1/2 tsp baking powder
- 1/2 tsp salt
Direction
- Line a 20 cm pan with two thicknesses of baking paper.
- Combine dates and mixed fruit in a saucepan with butter, spice and water. Stir over low heat until butter has melted.
- Bring to a boil and boil for 3 minutes. Remove from heat and allow to cool completely.
- Add rum and orange juice to eggs then add to fruit mixture. Mix well. Add sifted dry ingredients and combine thoroughly.
- Spread evenly into pan and bake for 2 hours at 170C.
- Cover with foil until cold.
