Double Chocolate Muffins

Muffins with yoghurt.

INGREADIENT

    • 1 3/4 cups plain flour
    • 1 tsp bicarbonate of soda
    • 1 cup caster sugar
    • 1/4 cup cocoa powder
    • 100 g butter
    • 1 egg
    • 1 cup plain yoghurt
    • 1/2 cup milk
    • 1/2 tsp vanilla essence
    • 1/2 cup milk chocolate chips

Direction

    1. Sift the dry ingredients into a large mixing bowl.
    2. Melt the butter, add the remaining wet ingredients and mix until smooth.
    3. Add the combined liquids to the dry ingredients and fold together until the flour is dampened, but not smooth.
    4. Divide the mixture evenly between 12 medium sized, greased muffin pans.
    5. Sprinkle with chocolate chips if desired before baking. Bake at 200C for 12 minutes.
