Gourmet Fruit Cake
A rich cake packed with fruit and nuts. It makes a great Christmas cake as it looks very festive.
INGREADIENT
- 1 1/2 cup mixed nuts roughly chopped
- 4 cup mixed dried fruit
- 3/4 cup dried apricots
- 1/2 cup brandy
- 1 cup glace cherries chopped
- 3/4 cup plain flour
- 3/4 cup sugar
- 1/2 tsp baking powder
- 3 egg
- 1 tsp vanilla essence
Direction
- Soak the dried fruit in the brandy in a large bowl until soft.
- Add the nuts and cherries.
- Sift dry ingredients together 2 to 3 times and add to the fruit.
- Add beaten eggs and vanilla, and mix well.
- Pour into a greased and lined ring tin.
- Bake in a slow oven for 1½-2 hours.
- Glaze top with warm apricot jam for a shiny finish (optional).
- Slice thinly to serve.
