Keto-Friendly Avocado and Walnut Salad with Pomegranate

INGREADIENT
- 1/2 bunch mint leaves only
- 1 bunch coriander leaves only
- 1 handful watercress leaves only
- 1 handful mache rosette leaves
- 1 avocados sliced
- 1 pomegranate, seeds removed
- 1 cup walnuts roughly chopped
- 1/2 avocado ripe
- 1 tsp seeded mustard
- 2 tbs lemon juice
- 6 tbs olive oil
- 1 splash apple cider vinegar
- 1 pinch sea salt
- 1 pinch black pepper
Direction
- Combine all the ingredients for the salad in a large bowl.
- Place all the ingredients for the dressing in a blender or food processor and process for 20-30 seconds or until you reach a smooth consistency.
