Keto-Friendly Creamy Avocado Zoodles
This vegan, gluten-free and keto-friendly meal from nutritionist, Rebecca Gawthorne, makes for a speedy weeknight staple.
INGREADIENT
- 6 zucchinis
- 1 avocado large
- 2 garlic cloves
- 1 handful fresh basil leaves
- 1/2 lemon juiced
- 1 tbs extra virgin olive oil
- 1 tbs nutritional yeast
- 1 splash rice bran oil *optional
Direction
- Wash zucchinis and remove ends.
- Using a spiralizer, spiralize all the zucchinis and then cook on a non-stick frying pan until softened. You can use a splash of rice bran oil if needed.
- Meanwhile, peel and mash avocado and place into a small bowl. Mix in olive oil, nutritional yeast and fresh chopped basil leaves.
- Mince garlic and cook in pan. Add into avocado mix with lemon juice and combine until smooth.
- Stir creamy avocado sauce through cooked zucchini spirals and serve.
