Keto-Friendly Creamy Avocado Zoodles

This vegan, gluten-free and keto-friendly meal from nutritionist, Rebecca Gawthorne, makes for a speedy weeknight staple.

INGREADIENT

    • 6 zucchinis
    • 1 avocado large
    • 2 garlic cloves
    • 1 handful fresh basil leaves
    • 1/2 lemon juiced
    • 1 tbs extra virgin olive oil
    • 1 tbs nutritional yeast
    • 1 splash rice bran oil *optional

Direction

    1. Wash zucchinis and remove ends.
    2. Using a spiralizer, spiralize all the zucchinis and then cook on a non-stick frying pan until softened. You can use a splash of rice bran oil if needed.
    3. Meanwhile, peel and mash avocado and place into a small bowl. Mix in olive oil, nutritional yeast and fresh chopped basil leaves.
    4. Mince garlic and cook in pan. Add into avocado mix with lemon juice and combine until smooth.
    5. Stir creamy avocado sauce through cooked zucchini spirals and serve.
