Keto-Friendly Whole Baked Snapper with Nuoc Cham

Hosting a dinner party? Give this Asian-inspired and keto-friendly share food a go - you won't be disappointed!

INGREADIENT

    • 1 whole snapper gutted large scaled
    • 2 spring onions chopped *to garnish
    • 2 lemons halved
    • 1 bunch coriander fresh
    • 1 pinch sea salt
    • 1 pinch black pepper
    • 1 handful green salad leaves
    • 1/2 punnet medley cherry tomatoes quartered

    Dressing

    • 1 red chilli finely chopped small
    • 1 garlic clove finely chopped
    • 1 tbs ginger finely chopped
    • 1 tbs fish sauce
    • 1 tsp honey
    • 2 limes juiced

Direction

    1. Preheat the oven to 190C.
    2. Line a baking tray with baking paper.
    3. Pat the snapper dry using paper towel.
    4. Place the coriander inside the cavity of the fish.
    5. Place the lemon halves in the baking tray with the fish.
    6. Pop in the oven for 20 minutes or until cooked through (times vary depending on size of the fish.)
    7. Combine all the ingredients for the dressing in a small glass jar and shake vigorously. Set aside.
    8. In a mixing bowl, combine the mixed green leaves and cherry tomatoes.
    9. Once the fish is cooked, remove the heat and allow to rest for 5 minutes.
    10. Sprinkle the shallots over the fish and serve with the salad and dressing .
