Keto-Friendly Whole Baked Snapper with Nuoc Cham

INGREADIENT
- 1 whole snapper gutted large scaled
- 2 spring onions chopped *to garnish
- 2 lemons halved
- 1 bunch coriander fresh
- 1 pinch sea salt
- 1 pinch black pepper
- 1 handful green salad leaves
- 1/2 punnet medley cherry tomatoes quartered
- 1 red chilli finely chopped small
- 1 garlic clove finely chopped
- 1 tbs ginger finely chopped
- 1 tbs fish sauce
- 1 tsp honey
- 2 limes juiced
Dressing
Direction
- Preheat the oven to 190C.
- Line a baking tray with baking paper.
- Pat the snapper dry using paper towel.
- Place the coriander inside the cavity of the fish.
- Place the lemon halves in the baking tray with the fish.
- Pop in the oven for 20 minutes or until cooked through (times vary depending on size of the fish.)
- Combine all the ingredients for the dressing in a small glass jar and shake vigorously. Set aside.
- In a mixing bowl, combine the mixed green leaves and cherry tomatoes.
- Once the fish is cooked, remove the heat and allow to rest for 5 minutes.
- Sprinkle the shallots over the fish and serve with the salad and dressing .
