Kiwifruit Cake

A very moist cake.

INGREADIENT

    • 2 cups plain flour
    • 1 1/2 tsp baking powder
    • 1 tsp bicarbonate of soda
    • 1/2 tsp ground cinnamon
    • 125 g butter
    • 2 tbs honey
    • 1 cup caster sugar
    • 3/4 cup kiwifruit chopped
    • 2 eggs lightly beaten
    • 250 g cream cheese
    • 2 tbs caster sugar
    • 1 lemon juiced

Direction

    1. Preheat oven to 160C and lightly grease a 23 cm springform pan and line base with paper.
    2. Sift flour, baking powder, bicarbonate of soda and cinnamon in a bowl and set aside.
    3. Combine butter, honey and sugar in a large bowl and beat until creamy. Add kiwifruit, eggs and sifted flour. Mix well.
    4. Spoon into the pan and bake for 40-45 minutes until cooked or a skewer comes out clean.
    5. Stand for 10 minutes, then cool on rack. Spread the top and sides with frosting and decorate with kiwi slices.
    6. Cream cheese frosting: Beat the cream cheese until smooth. Add caster sugar and the lemon juice and continue beating until smooth.
    7. Leave in refrigerator for 30 minutes before spreading on cooled cake.
