Lamington Cupcakes

Take all the favourites of the iconic Australian lamington and put it in a cupcake!

INGREADIENT

    • 275g self-raising flour
    • 1 1/2 tsp baking powder
    • 300g caster sugar
    • 100g desiccated coconut
    • 250g butter melted
    • 4 egg
    • 185ml milk
    • 25g cocoa powder
    • 100g icing sugar
    • 2 tbs milk
    • 1 tbs butter melted
    • 1 tbs boiling water
    • 1/2 cup desiccated coconut

Direction

    1. Preheat oven to 175C.
    2. Place all dry ingredients into a food processor. Mix until all combined.
    3. Add all wet ingredients and mix until it is a smooth batter.
    4. Pour into 18 patty cases and cook for 15-17 minutes.
    5. For the icing, combine all ingredients, except for the coconut, until smooth.
    6. When cakes are cooled, ice with chocolate icing and sprinkle coconut on top.
