Lamington Cupcakes
Take all the favourites of the iconic Australian lamington and put it in a cupcake!
INGREADIENT
- 275g self-raising flour
- 1 1/2 tsp baking powder
- 300g caster sugar
- 100g desiccated coconut
- 250g butter melted
- 4 egg
- 185ml milk
- 25g cocoa powder
- 100g icing sugar
- 2 tbs milk
- 1 tbs butter melted
- 1 tbs boiling water
- 1/2 cup desiccated coconut
Direction
- Preheat oven to 175C.
- Place all dry ingredients into a food processor. Mix until all combined.
- Add all wet ingredients and mix until it is a smooth batter.
- Pour into 18 patty cases and cook for 15-17 minutes.
- For the icing, combine all ingredients, except for the coconut, until smooth.
- When cakes are cooled, ice with chocolate icing and sprinkle coconut on top.
