Mango Fruit Cake
Very tasty and moist. Why not double up? One for now and one for later!
INGREADIENT
- 375g mixed fruit
- 425g canned mango in syrup
- 1/2 tsp bicarbonate of soda
- 1 cup self-raising flour
- 1 egg
- 1/2 cup walnuts chopped,
Direction
- Place fruit, mango and bicarbonate of soda into a saucepan.
- Boil for 5 minutes. Allow to cool.
- Add flour, egg and walnuts and mix well.
- Pour into a ring tin.
- Bake at 170C fan-forced for 40 - 45 minutes.
