Mango Fruit Cake

Very tasty and moist. Why not double up? One for now and one for later!

INGREADIENT

    • 375g mixed fruit
    • 425g canned mango in syrup
    • 1/2 tsp bicarbonate of soda
    • 1 cup self-raising flour
    • 1 egg
    • 1/2 cup walnuts chopped,

Direction

    1. Place fruit, mango and bicarbonate of soda into a saucepan.
    2. Boil for 5 minutes. Allow to cool.
    3. Add flour, egg and walnuts and mix well.
    4. Pour into a ring tin.
    5. Bake at 170C fan-forced for 40 - 45 minutes.
