Mum's fruit cake
The best fruit cake in the world. My dear mum who has serious Alzheimer's disease used to make this and I thought we had lost it forever. Fortunately my eldest sister came across it written on a piece of paper inside a book.
INGREADIENT
- 680 g mixed fruit
- 225 g butter
- 680 g sugar
- 6 eggs beaten
- 60 g almonds chopped
- 60 g cherries halved
- 1 tsp vanilla essence
- 2 tsp mixed spice
- 450 g self-raising flour
- 570 ml water
Direction
- Place butter, mixed fruit, sugar, spices, vanilla essence, water, cherries and almonds in pan and simmer for 20 minutes. Allow mixture to cool.
- Add eggs and flour.
- Bake at 180C for 30 minutes, then reduce temperature to 170C and bake for 1½ hours.
