Mum's fruit cake

The best fruit cake in the world. My dear mum who has serious Alzheimer's disease used to make this and I thought we had lost it forever. Fortunately my eldest sister came across it written on a piece of paper inside a book.

INGREADIENT

    • 680 g mixed fruit
    • 225 g butter
    • 680 g sugar
    • 6 eggs beaten
    • 60 g almonds chopped
    • 60 g cherries halved
    • 1 tsp vanilla essence
    • 2 tsp mixed spice
    • 450 g self-raising flour
    • 570 ml water

Direction

    1. Place butter, mixed fruit, sugar, spices, vanilla essence, water, cherries and almonds in pan and simmer for 20 minutes. Allow mixture to cool.
    2. Add eggs and flour.
    3. Bake at 180C for 30 minutes, then reduce temperature to 170C and bake for 1½ hours.
