No-Bake Carrot Cake Bliss Balls
These ridiculously easy vegetarian, vegan and gluten-free raw bliss balls require zero cooking and are perfect for an afternoon snack. They are simple to make, refined sugar-free and taste just like carrot cake!
INGREADIENT
- 3/4 cup oat flour
- 3/4 cup cashew nuts
- 3/4 cup walnuts
- 3/4 cup almonds
- 3/4 cup desiccated coconut
- 1 tsp ginger powder
- 1 tsp cinnamon
- 6 medjool dates
- 2 tbs coconut oil
- 2 carrots, peeled and grated
- A pinch of nutmeg
- A pinch of salt
Direction
- Remove the stones from the medjool dates and soak them in warm water for around 30 - 40 mins.
- Place the desiccated coconut and nuts in a food processor with the ginger powder, flour, cinnamon, salt and nutmeg and blitz until the nuts are chopped into small pieces.
- Add coconut oil, medjool dates with with 1 tbs of the soaked date water to the nut mixture. Blend again on high speed until the ingredients start to stick together.
- Add the grated carrots and blitz until mixed well.
- Scoop a tsp of the mixture and roll into bite-sized balls.
