No-Fat Fruit Cake
A moist fruitcake that can be made in a slice tin, if preferred. Very quick and simple to prepare and suitable for diabetics.
INGREADIENT
- 750 g mixed fruit
- 2 cup coffee (liquid)
- 2 cup self-raising flour sifted
Direction
- Place dried fruit in a bowl. Add the strong black coffee, cover and leave overnight or a minimum of 6 hours.
- Line desired baking pan with baking paper and preheat oven to 170C.
- Add 2 cups of self-raising flour and stir thoroughly with a wooden spoon or spatula.
- Place mixture in pan, spread top evenly and bake in oven for 45 minutes to 1 hour.
- Allow cake to cool before removing from pan.
