Orange Sour Cream Muffins
Light and moist, yet rich and very flavoursome.
INGREADIENT
- 120 g butter
- 1/2 cup raw sugar
- 2 eggs
- 1/2 cup milk
- 1/2 cup sour cream
- 1 orange juiced zested
- 2 cups self-raising flour
- 1/4 tsp baking soda
- 1 tbs berry jam optional
- 1 olive oil spray for greasing
Direction
- Preheat oven to 200C and prepare muffin tray with oil spray or papers.
- Cream the butter and the sugar.
- Beat in the eggs, milk, sour cream, rind and juice.
- Fold in sifted flour and baking soda, and spoon into greased muffin pans.
- Drop ½ teaspoon of berry jam into the top of each muffin and push down a little into the mix.
- Bake for 20 minutes, or until a skewer comes out clean
