Pasta Fetta Salad
A healthy salad that's very enjoyable too.
INGREADIENT
- 500 g spirals pasta shapes
- 1 Lebanese cucumber cut lengthways deseeded thinly sliced
- 1 red capsicum chopped
- 8 spring onions sliced
- 250 g cherry tomatoes halved
- 1/2 cup parsley chopped fresh
- 200 g fetta crumbled
- 1/2 cup black olives
- 1/2 cup light olive oil
- 1/4 cup white wine vinegar
- 1 tsp grainy mustard
- 1 garlic clove crushed
- 1 pinch salt and pepper *to taste
Direction
- Add pasta to a large saucepan of boiling water, boil uncovered, for about 12 minutes, or until tender. Drain.
- Rinse pasta under cold water. Drain well.
- Dressing: Combine all ingredients in a screw-topped jar. Shake well.
- Combine cucumber, pasta, capsicum, spring onions, tomatoes, olives and parsley in a large glass bowl.
- Add dressing and mix well.
- Gently stir in the feta cheese.
