Pear and Nut Muffins

Super tasty fruit and nut muffins that are perfect for everyone. These muffins are a delicious snack for all ages and a great way to get the extra fruit into fussy young eaters!

INGREADIENT

    • 1 1/2 cups wholemeal self-raising flour
    • 1/2 cup brown sugar
    • 1 1/2 tbs mixed spice
    • 1/4 cup linseeds *optional
    • A handful sunflower seeds *optional
    • A handful almonds *optional
    • 3 eggs lightly beaten
    • 4 tbs olive oil
    • 2 cups pear chopped
    • 3/4 cup mixed nuts chopped
    • 1/4 cup sunflower seeds optional
    • 1 tsp ground cinnamon

Direction

    1. Preheat oven to 180C.
    2. Sift flour, sugar and spice into mixing bowl
    3. Add nuts, seeds and pears, eggs and oil. Mix all together.
    4. Spoon into muffin 12 large muffin pans or 24 small muffin pans
    5. Bake at 180C for approximately 15 minutes or until browned.
    6. Rest for 5 minutes, then transfer to cooling rack and dust with cinnamon.
