Pumpkin, Fetta and Rocket Salad
It's very easy and makes a perfect side dish for a wide range of meals. The sweetness of the pumpkin and saltiness of the fetta makes a great combination.
INGREADIENT
- 3 cups pumpkin diced
- 1/4 cup olive oil
- 2 tbs honey
- 1 tbs dried sage
- 100 g fetta crumbled
- 1 cup rocket leaves
Direction
- Combine oil, honey and sage together and toss through pumpkin.
- Bake pumpkin in a 220C oven for 30 minutes until starting to brown, then allow to cool, making sure oil is kept in the bottom of the dish.
- Toss the pumpkin, feta and rocket with the oil.
