Pumpkin, Fetta and Rocket Salad

It's very easy and makes a perfect side dish for a wide range of meals. The sweetness of the pumpkin and saltiness of the fetta makes a great combination.

INGREADIENT

    • 3 cups pumpkin diced
    • 1/4 cup olive oil
    • 2 tbs honey
    • 1 tbs dried sage
    • 100 g fetta crumbled
    • 1 cup rocket leaves

Direction

    1. Combine oil, honey and sage together and toss through pumpkin.
    2. Bake pumpkin in a 220C oven for 30 minutes until starting to brown, then allow to cool, making sure oil is kept in the bottom of the dish.
    3. Toss the pumpkin, feta and rocket with the oil.
