Pumpkin Fruit Cake

A moist fruit cake that keeps well and has the family eating pumpkin!

INGREADIENT

    • 225 g butter
    • 1 cup sugar
    • 2 egg
    • 1 cup pumpkin mash
    • 500 g mixed fruit
    • 2 cup plain flour
    • 1 tsp baking powder
    • 1 tsp vanilla essence
    • 1 tsp lemon essence

Direction

    1. Preeat oven to 180C.
    2. Grease and line a 20 cm ring tin.
    3. Cream butter and sugar until fluffy.
    4. Add eggs, one at a time, mixing well.
    5. Add pumpkin and mix until smooth.
    6. Add the sifted flour and baking powder.
    7. Add the fruit and essences.
    8. Add to the prepared pan and bake for 1-1½ hours.
    9. Cool in the tin.
