Pumpkin Fruit Cake
A moist fruit cake that keeps well and has the family eating pumpkin!
INGREADIENT
- 225 g butter
- 1 cup sugar
- 2 egg
- 1 cup pumpkin mash
- 500 g mixed fruit
- 2 cup plain flour
- 1 tsp baking powder
- 1 tsp vanilla essence
- 1 tsp lemon essence
Direction
- Preeat oven to 180C.
- Grease and line a 20 cm ring tin.
- Cream butter and sugar until fluffy.
- Add eggs, one at a time, mixing well.
- Add pumpkin and mix until smooth.
- Add the sifted flour and baking powder.
- Add the fruit and essences.
- Add to the prepared pan and bake for 1-1½ hours.
- Cool in the tin.
