Rice salad
A creamy, mildly curried rice salad. Great to take to a barbecue as a change from the normal rice salad. This recipe is also great as a side salad.
INGREADIENT
- 2 cups rice cooked
- 1 tsp curry powder
- 2 tbs oil
- 1 tbs white vinegar
- 1/2 green capsicum finely chopped
- 1 cup celery chopped
- 1 cup mayonnaise
- 1 cup peas cooked
- 6 spring onions chopped
Direction
- Mix rice, curry powder, oil and vinegar together.
- Refrigerate for at least 3 hours.
- Add capsicum, peas, celery, spring onions and mayonnaise to rice.
- Chill before serving.
