Salmon Sushi Bowl

Sergio Perera is Chris Hemsworth's Centr nutrition and diet consultant and this fresh, Japanese-flavored lunch bowl will have your co-workers drooling with envy. Mix it up by subbing salmon for chicken, beef or all veg.

INGREADIENT

    • 1⁄2 bunch of broccolini
    • 1 1⁄2 cups pre-cooked brown rice prepare to packet instructions
    • 180g smoked salmon
    • 80g edamame frozen defrosted podded
    • 2 carrots medium julienned
    • 1⁄2 avocado sliced
    • 2 nori sheets cut into fine strips
    • 3 tsp black sesame seeds
    • 1 pinch salt and pepper to taste
    • 3 tsp soy sauce
    • 3 tsp mirin

Direction

    1. Heat a frypan over medium-high heat. Add broccolini to frypan and cook, tossing for a few minutes.
    2. Make dressing by mixing soy sauce and mirin together in a small bowl.
    3. 3. Divide rice between two bowls, top with salmon, broccolini, edamame beans, carrot, avocado, nori and sesame seeds. Season with salt and pepper, and serve with dressing.
