Salmon Sushi Bowl
Sergio Perera is Chris Hemsworth's Centr nutrition and diet consultant and this fresh, Japanese-flavored lunch bowl will have your co-workers drooling with envy. Mix it up by subbing salmon for chicken, beef or all veg.
INGREADIENT
- 1⁄2 bunch of broccolini
- 1 1⁄2 cups pre-cooked brown rice prepare to packet instructions
- 180g smoked salmon
- 80g edamame frozen defrosted podded
- 2 carrots medium julienned
- 1⁄2 avocado sliced
- 2 nori sheets cut into fine strips
- 3 tsp black sesame seeds
- 1 pinch salt and pepper to taste
- 3 tsp soy sauce
- 3 tsp mirin
Direction
- Heat a frypan over medium-high heat. Add broccolini to frypan and cook, tossing for a few minutes.
- Make dressing by mixing soy sauce and mirin together in a small bowl.
- 3. Divide rice between two bowls, top with salmon, broccolini, edamame beans, carrot, avocado, nori and sesame seeds. Season with salt and pepper, and serve with dressing.
