Smashed Pea and Goat's Cheese Sandwiches

Add some pizzazz to your lunch box with these flavoursome smashed pea and goat cheese rolls. Utterly delish AND healthy!

INGREADIENT

    • 200 g frozen peas
    • 1 clove garlic
    • 1/4 cup mint fresh
    • 2 tsp Extra virgin olive oil spray
    • 1 tsp red wine vinegar
    • 10 bread roll
    • 100 g goat's cheese
    • 2 sprigs thyme fresh

Direction

    1. Place the peas in a saucepan of boiling water, and cook for 3-5 minutes or until tender. Cool under a cold running tap and drain.
    2. Pop the peas into the food processor (or use a hand blender) and puree together with garlic, mint, olive oil and vinegar, until the mixture looks like a rustic paste.
    3. Spoon pea mix into rolls and top with as much goat cheese as you like. Add a sprinkle of herbs and season with salt and pepper.
