Smoked Chicken Slaw with Goddess Dressing
Strips of smoked chicken in a cabbage and carrot coleslaw topped with a yoghurt and avocado based Goddess Dressing. Serve remaining dressing on the side for guests to add extra if desired. This dressing also acts well as an accompaniment to fish or chicken. With smoked chicken, a little goes a long way.
INGREADIENT
- 1 cup smoked chicken shredded
- 1/2 onion
- 1/4 cabbage
- 1 carrot
- 1/2 cup fresh parsley chopped
- 1/2 bunch basil
- 100 g Greek yoghurt
- 1/2 avocado
- 1 tsp Dijon mustard
- 3 tbs white wine vinegar
- 2 tbs olive oil
Dressing
Direction
- Slaw: Finely slice cabbage and onion, then grate carrot. You can do large batches in a food processor. Place in a large bowl. Add parsley and chicken.
- Dressing: Add all the ingredients into a blender and blitz until smooth and creamy.
- Add the desired amount of dressing to the bowl and toss gently.
