Soba noodle salad
Yummy, delicious and healthy for lunch or snacking.
INGREADIENT
- 250 g soba noodles
- 1/4 cup fried Asian shallots
- 1/4 cup coriander chopped
- 1 carrot grated large
- 200 g snow peas blanched
- 1/4 cup soy sauce
- 1/4 cup honey
- 3 tbs rice vinegar
- 3 tbs toasted sesame seeds
Direction
- Cook soba noodles according to instructions on packet and leave to cool.
- Combine shallots, coriander, carrot, snow peas, sesame seeds in a bowl with the cooled soba noodles.
- In a separate bowl, combine soy sauce, honey and rice vinegar, taste and adjust as desired.
- Pour dressing over soba noodles, toss and serve.
