Soba noodle salad

Yummy, delicious and healthy for lunch or snacking.

INGREADIENT

    • 250 g soba noodles
    • 1/4 cup fried Asian shallots
    • 1/4 cup coriander chopped
    • 1 carrot grated large
    • 200 g snow peas blanched
    • 1/4 cup soy sauce
    • 1/4 cup honey
    • 3 tbs rice vinegar
    • 3 tbs toasted sesame seeds

Direction

    1. Cook soba noodles according to instructions on packet and leave to cool.
    2. Combine shallots, coriander, carrot, snow peas, sesame seeds in a bowl with the cooled soba noodles.
    3. In a separate bowl, combine soy sauce, honey and rice vinegar, taste and adjust as desired.
    4. Pour dressing over soba noodles, toss and serve.
