Spiced Chicken and Mango Salad

Brighten up your weeknight mains with this fresh and vibrant salad.

INGREADIENT

    • 1 chicken breast skin on free-range
    • 1 tsp Chinese five-spice powder
    • 1 olive oil
    • 2 spring onions trimmed washed finely sliced
    • 1 handful coriander dried roughly chopped washed
    • 1/2 mango peeled cut into chunks
    • 1 lime juiced
    • 1 handful macadamias roughly chopped
    • 1 handful pea shoots
    • 1 iceberg lettuce roughly chopped small washed

Direction

    1. Cut the chicken breast into bite-sized pieces and pop into a bowl with the Chinese five spice. Mix so the spice covers all of the chicken.
    2. Heat the olive oil over a high heat in a medium -ized pan and once hot, add the chicken and cook until browned all over. Once cooked, remove the chicken from the pan and set aside.
    3. In a large mixing bowl, bring together the spring onions, coriander, mango, lime juice, macadamia nuts, pea shoots (or watercress), lettuce and cooked chicken.
    4. Toss to combine and serve immediately.
