Spinach and Bacon Mini Quiche

Great party food for all occasions. Really great re-heated or the kids can take them cold to school!

INGREADIENT

    • 3 sheets puff pastry
    • 4 bacon rashers diced
    • 4 eggs
    • 1 onion diced
    • 3 leaves spinach large shredded
    • 1 cup cheese grated
    • 1 tsp salt and pepper

Direction

    1. Preheat oven to 180C and grease muffin pans.
    2. In a medium saucepan, brown onion and bacon.
    3. Turn off the heat and add spinach so that the heat wilts it.
    4. Add all other ingredients and mix well.
    5. Cut small circles from the puff pastry to fit the bottom of the muffin cases.
    6. Place pastry in the muffin cases and spoon in 2 teaspoons of mixture.
    7. Bake for approximately 20 minutes or until firm and browned.
