Spinach and Bacon Mini Quiche
Great party food for all occasions. Really great re-heated or the kids can take them cold to school!
INGREADIENT
- 3 sheets puff pastry
- 4 bacon rashers diced
- 4 eggs
- 1 onion diced
- 3 leaves spinach large shredded
- 1 cup cheese grated
- 1 tsp salt and pepper
Direction
- Preheat oven to 180C and grease muffin pans.
- In a medium saucepan, brown onion and bacon.
- Turn off the heat and add spinach so that the heat wilts it.
- Add all other ingredients and mix well.
- Cut small circles from the puff pastry to fit the bottom of the muffin cases.
- Place pastry in the muffin cases and spoon in 2 teaspoons of mixture.
- Bake for approximately 20 minutes or until firm and browned.
