Spinach and fetta quiche

A vegetarian quiche you can serve hot or cold.

INGREADIENT

    • 3 eggs
    • 100 g fetta crumbled
    • 125 g spinach
    • 1/2 cup self-raising flour
    • 1 1/2 cups skim milk
    • 1/2 cup cheese grated
    • 1 onion thinly sliced
    • 200 g mushrooms

Direction

    1. Saute onion and mushrooms until just cooked.
    2. Mix flour, eggs, cheese and milk together in a bowl.
    3. Add the fetta to the spinach and combine with the onion and egg mixtures.
    4. Spray a quiche dish with non-stick spray.
    5. Pour mixture into dish and bake at 180C for 30-35 minutes.
