Sue's Scrumptious Chicken Salad
Made with a shop-bought barbecue chicken, this no-cook chicken salad has the perfect balance of savour-sweet flavours, plus a zesty orange dressing. It's perfect for an easy lunch or light dinner.
INGREADIENT
- 1 barbecued cooked chicken deboned
- 150g snow peas
- 150g mixed salad leaves
- 3 nectarines cut into wedges ripe
- 1/2 red onion small
- 1/4 cup pine nuts
- 1/2 cup orange juice
- 1/4 cup extra light virgin olive oil
- 2 tsp sweet chilli sauce *to taste
- 1 handful fresh chives chopped *to garnish
Direction
- Add all salad ingredients into a bowl.
- Sprinkle small amount of the dressing onto the salad and combine well.
- Garnish with chives.
