Super Moist Boiled Christmas Fruit Cake
This delicious boiled fruit cake is the easiest recipe ever and it never fails! Everyone loves how moist it is and it's all thrown together in one saucepan then baked. I make up my own dried fruit as I don't like the peel in pre-mixed fruit.
INGREADIENT
- 500 g mixed dried fruit
- 125 g butter
- 1 1/2 cups water
- 1 cup brown sugar
- 1 tsp bicarbonate of soda
- 1 tsp allspice
- 2 eggs beaten
- 1 cup self-raising flour
- 1 cup plain flour
- 3 tbs sherry *optional
- 1/2 cup almonds
Direction
- Place the first 5 ingredients into a large saucepan and boil for 5 minutes. Cool mixture.
- Add eggs, flour, nuts, spices and sherry. Mix well.
- Bake in a springform tin lined with baking paper and cook in a 170C oven for 70 - 90 minutes. Cool cake in the tin before removing and storing in an airtight container.
