Zoe Bingley-Pullin's Citrus Marinated Salmon with Freekeh Salad

A delicious dinner packed with fresh herbs and zesty flavours from TV chef and nutritionist, Zoe Bingley-Pullin.

INGREADIENT

    • 1/2 cup freekeh uncooked
    • 1/4 cup carrot julienned
    • 1/4 cup capsicum chopped
    • 1/4 cup parsley chopped
    • 1/4 cup coriander chopped
    • 1/2 Spanish onion
    • 1 tsp lemon juice
    • 1 tsp lime juice
    • 1/2 tbs orange juice
    • 1 garlic clove
    • 1/2 tbs tamari soy sauce
    • 1 tbs extra virgin olive oil
    • 1 tsp ginger
    • 1 tsp chilli
    • 2 tbs sheep's milk yoghurt
    • 2 x 200 g salmon

Direction

    1. 1/2 tbs lemon juice
    2. 1 tsp lemon zest
    3. 1/2 tbs lime juice
    4. 1 tsp lime zest
    5. 1/2 tbs orange juice
    6. 1 tsp orange zest
