Zucchini Bites

Yummy little savoury muffins for afternoon tea or school lunch boxes.

INGREADIENT

    • 1 tbs olive oil
    • 3 rashers rindless bacon finely chopped
    • 1 onion finely chopped
    • 1 carrot coarsely grated large peeled
    • 1 zucchini coarsely grated large
    • 3 eggs
    • 1 cup tasty cheese grated
    • 1/4 cup cream
    • 1/2 cup self-raising flour sifted
    • 1 pinch salt and pepper *to taste

Direction

    1. Preheat oven to 180C and line a 12 hole muffin pan with patty cases.
    2. Heat oil in a large frying pan on high.
    3. Saute bacon and onion for 4-5 minutes. Stir in zucchini and carrot.
    4. Transfer to a large bowl and cool for 10 minutes.
    5. In a jug, whisk together eggs, cheese and cream. Season to taste.
    6. Stir egg mixture into cooled zucchini mixture.
    7. Stir flour through until well combined.
    8. Spoon mixture into prepared pans and bake for 20-25 minutes, until golden and cooked when tested.
    9. Serve warm or cold.
